Good To Know: As you can see in the infographic, Kale has more calcium than milk, making it a great source of calcium for those who are lactose intolerant or vegan. Kale also has more iron than beef, making it another vegan alternative.
Adding Kale To Your Diet
Just last night, I had a bunch of kale and some apples that needed to be used soon before they went bad. I decided to juice the kale and apples and…voila! It was super simple and easy (recipe below).
I shared the organic green juice with my daughter and she (surprisingly) loved it! Never assume you or your little one won’t like a new healthy food or drink. Give yourself and/or kids a chance to like healthy choices!!!
Kale Juice Recipe
Ingredients:
1 bunch of Kale
4 Apples

- 1 bunch of lacinato or dinosaur kale, stems removed, rinsed and patted dry
- ⅓ cup currants (or chopped raisins)
- juice of one lemon
- 1 tbsp of olive oil
- 1 tsp local honey
- ½ cup pine nuts toasted
- salt and pepper to taste
- 4 tbsp grated raw parmesan cheese
