Hello, October! It’s that time of year again. As a certified health nut (ha!), I feel it is only my duty to share with all of you Healthy Halloween recipes that you can feel good about. I am a huge believer that healthy doesn’t have to sacrifice flavor, and during the holidays, you shouldn’t have to sacrifice any of the fun! So many people will say, “Oh, but it’s Halloween! You gotta splurge and eat junk food!” NO. You don’t have to eat any junk to have FUN and enjoy delicious Halloween treats! Not So Devilish Eggs

I absolutely love deviled eggs, but I don’t make them all too often for a number of reasons. To make deviled eggs healthier, I suggest using less yolks and/or a healthy mayo replacement. Ingredients: 12 eggs, hard boiled and shells removed 1/4 cup Grapeseed Vegenaise 1 tbsp Mustard Paprika, garnish Instructions: Step 1) Cut eggs in half, lengthwise, with a sharp knife. Remove yolks and place in bowl. Step 2) Mash yolks and mix in the Vegenaise and Mustard. Step 3) Spoon yolk mixture onto egg white halves and sprinkle Paprika on top. Tip: For a smooth and creamy egg yolk texture, mix ingredients in a blender or with egg beaters. Also, if you would like the finished product to look more fancy than your average deviled egg, use the creamy mixture with cake decorating supplies and use that to place onto the egg whites....

Baked Kale. It’s the new potato chip. Tasty. Nutritious. What’s not to love? Ingredients:  1 bunch of Kale Olive Oil Sea Salt Instructions:  Step 1) Preheat oven to 250 degrees. You don’t want to have it any higher since olive oil is very heat sensitive. Step 2) Place kale leaves on a baking sheet. Drizzle a small amount of olive oil on each kale leaf and sprinkle with sea salt. Step 3) Bake kale leaves for 40 minutes, or until fully cooked (leaves should be flaky and easy to break). Notes: Kale is a nutritionally dense food that is rich in iodine and has about four times the iron found in beef.
