Healthy Taco Recipe for Cinco de Mayo!

To celebrate Cinco de Mayo, I thought I would share a delicious taco recipe with you! Ingredients: 2 cups of shredded (cooked) Chicken 1 1/2 tsp Chili Powder 1/2 tsp dried Oregano 1/2 tsp ground Cumin 1/2 tsp ground Coriander 1/4 tsp Sea Salt 1 tbsp Coconut Oil 2 tsp minced Garlic 3 finely chopped Green Onions 1/4 cup Chicken Broth 1 cup cooked Quinoa 1 cup cooked Black Beans (drained) 6-8 Corn Tortillas 1/2 cup chopped Grape Tomatoes 1/8 cup shredded Cheddar & Monterey Jack Cheese 1 lime for lime zest and juice Instructions: Step 1) Combine chicken, chili powder, oregano, cumin, coriander,  sea salt, quinoa and beans into a bowl. The regular taco seasoning mix from the grocery store is quite…bad for you. The taco seasoning mixes are full of MSG, sodium,  and other unhealthy ingredients. Because of this, I thought it was time I let you know how to make your own healthy taco seasoning mix! It’s a pretty quick and simple recipe, and I am sure you will love it! Ingredients:  3 tsp Chili Powder 1/8 tsp Cayenne Pepper 3 tsp dried minced Onion 1 tsp Cornstarch 1/2 tsp Sea Salt 1 tsp Garlic Powder 1 tsp ground Cumin 1/2 tsp dried Oregano Instructions: Combine all ingredients and use in replace of taco seasoning mix. This year, celebrate St. Patrick’s Day with a green breakfast! You can start by ditching the Lucky Charms®, and make yourself a very easy and very green breakfast that your taste buds are sure to love! Ingredients:  •10 large eggs: 2 whole, 8 egg whites •1 cup of fresh spinach •1 teaspoon coconut oil •Pinch of salt and/or pepper Instructions: Step 1) In a blender, mix the eggs and spinach until spinach is blended in thoroughly. Step 2) Warm skillet, and add coconut oil to pan. Spread the oil to evenly distribute on the pan. Step 3) Add egg and spinach mixture along with desired salt and pepper to the warmed skillet. Easy Rice Pudding

Ingredients: •1 1/2 cups uncooked brown rice •1 1/2 cups rice milk •1/2 cup to 1 cup of creamed honey •1 teaspoon cinnamon Instructions: Step 1) Cook the rice as normal. Step 2) In a pot on the stove at medium heat, combine the cooked rice, rice milk, creamed honey, and 1/2 teaspoon of the cinnamon. Stir until creamed honey is melted completely. Step 3) Pour Rice Pudding into 4 bowls, and add the rest of the cinnamon on the top of each bowl as a garnish. Notes: Do you need an easy recipe that tastes delicious? This Rice Pudding recipe is very easy to make (even my husband can make this on his own!), and it’s healthy for you too. Oh yeah, you would never know that it’s gluten free and lactose free…because it tastes that good! ; )...

Macaroni Tuna Salad

Ingredients: 8 oz. Macaroni Elbows 3 cans (7 oz each) Tuna 1 1/4 cup Nayonaise by NaSoya 5 stalks Green Onions, chopped 3 stalks Celery, chopped 1/2 Red Pepper, chopped Instructions: Step 1) Cook macaroni as directed. Drain and put in the refrigerator to cool down for 10 minutes Step 2) Combine all of the ingredients together; macaroni, tuna, Nayonaise by NaSoya, green onions, celery, and red peppers. Step 3) Eat immediately or put in the refrigerator (covered) until you are ready to eat and enjoy. Notes: I like tuna, but not always in a sandwich…so what a refreshing way to enjoy tuna! Try as a delicious lunch, or as a side dish. It’s nice to try something new, and I think your family will like this new addition to your recipe book! I  use Nayonaise by NaSoya as a Mayonnaise replacement....

Chicken Kabobs

Ingredients: 8 Bamboo Kabob Skewers 2 Chicken breasts 8 Mushrooms 1 Red Pepper 1 Green Pepper 4 small Tomatoes 1 Purple Onion Chicken Seasoning Instructions: Step 1) Preheat grill Step 2) Cut up chicken, red and green pepper, onions, and tomatoes into sizes appropriate for cooking on a kabob (see photo) Step 3) Add ingredients onto the kabob skewer, mixing up the colors and order of ingredients to add variety. Add chicken seasoning to kabobs. Step 4) Cook on grill for 10 minutes, then rotate and cook for another 10 minutes; 20 minutes total, or until chicken is fully cooked.   Notes: You can cook this in the oven, just bake at 350 degrees for about 20 minutes, or until chicken is fully cooked. Rosemary Potatoes

Ingredients: 15 Red Potatoes 3 tablespoons Coconut Oil Garlic Powder Sea Salt Rosemary Instructions: Step 1) Preheat oven to 350 degrees. Step 2) Cut potatoes into cubed pieces (see photo), and put into glass casserole dish. Step 3) Place chunks of coconut oil throughout potatoes. Step 4) Add garlic powder, sea salt,  and rosemary to potatoes. Step 5) Bake for 90 minutes (covered), or until potatoes are soft. Notes: This is probably one of my favorite dishes. These waffles are extremely easy to make. Very healthy. Very delicious. You’d think that these waffles were made at a gourmet restaurant. Ingredients: 1 3/4 cups Brown Rice Flour 1 tsp Baking Powder 1/4 tsp Sea Salt 2 eggs (separate yolks and whites) 1 3/4 cups Rice Milk 1 tsp Vanilla Extract 1/2 cup Coconut Oil Non Fat Whipped Cream Ground Nutmeg Maple Syrup   Instructions: Step 1) Mix flour, baking powder, and salt in a bowl. Step 2) In another bowl, beat egg yolks and then stir in milk, vanilla, and oil. Step 3) Combine both mixtures. Step 4) In a separate bowl, beat egg whites until peaks form. Ingredients: 6 soft Tortillas (warmed) 2 cups cooked Brown Rice 1 cup cooked Black Beans 2 cups shredded Lettuce 1 cup chopped Tomatoes 1/2 cup grated Almond Cheddar Style Cheese Red or Green Sauce, if desired. Instructions: Step 1) Place warmed tortilla on a plate, and then add rice, black beans, lettuce, tomatoes and almond cheese on the tortilla. Step 2) Wrap up tortilla to make a burrito. Enjoy! Note: The variety of colors and  flavors mix well together, and this is a delicious burrito all on it’s own!
