Yogurt Parfait

Creating a Yogurt Parfait is a great low calorie treat and delicious way to enjoy Plain Yogurt! It’s the way yogurt was meant to be eaten and enjoyed! Ingredients:  3 cups Plain Yogurt 1/2 cup sliced Strawberries 1/2 cup Blueberries 1/2 cup Raspberries 1 tbsp chopped Walnuts Instructions: Step 1) Add some yogurt into each container and top with mixed berries. Repeat this step until each container is full. Step 2) Add chopped walnuts on top of the parfait, as a garnish. Notes:  A lot of people have a hard time eating completely plain yogurt – with no added flavors or sugars. I suggest adding fruit or some other healthy toppings to make it more enjoyable. I love making this easy, delicious, and healthy chicken salad recipe! This particular recipe makes a big batch, which is great to feed a lot of people at home or to bring to a potluck! You can even make this recipe and enjoy this meal for the rest of the week – and trust me, it’s good enough you’ll want to! Ingredients: 20-25 baked Chicken Tenderloins, chopped or shredded 1 cup Vegenaise (healthy mayo replacement) 1/2 cup dried Cranberries 1/2 cup chopped Walnuts 1/2 cup chopped Celery 1 cup diced Grapes 1 tsp Poppy Seeds You can shred it or chop it up, whichever you prefer! You can use canned chicken, but it’s not ideal. Who else loves to munch on banana chips?! Who loves munching on banana chips that are full of sugar? Not me! I borrowed a food dehydrator from my wonderful sister-in-law (thank you!), and decided to take advantage of the situation by making healthy banana chips that have no added sugar! I think you will enjoy this easy recipe. It’s so basic, can I really call it a recipe? Hmmm… I’ll let you be the judge of that. Ingredients: 4 (or more) bunches of ripe Bananas Spectrum® Coconut Oil Spray Instructions: Step 1) Peel the bananas and slice the bananas into 1/8 inch thick slices. A lot of people enjoy Tiger Prawns at restaurants (or any shrimp for that matter), but they don’t feel confident in making their own dish at home. My brother (who is an amazing cook!) was visiting me for a couple of days and was the inspiration for this superb dish! I love to buy blueberries in bulk during the Summer so I can benefit from this wonderful fruit which is full of antioxidants. I needed to make sure I used them up before they got old and soft. Blueberry muffins anyone? Ingredients: 2 cups of GlutenFree All Purpose Baking Flour by Bob’s Red Mill 1/2 tsp Sea Salt 2 tsps Baking Powder 1/2 cup Raw Honey 1/3 cup melted Coconut Oil 1 egg 1/3 cup Rice Milk 2 cups fresh Blueberries 1/2 tsp Cinnamon 1/2 tsp Nutmeg Instructions: Step 1) Preheat oven to 400 degrees. You can eat these macaroons without the guilt! Ingredients: 7 Egg Whites 3/4 cup Raw Honey 1/4 teaspoon Sea Salt 4 1/2 cups Unsweetened Coconut Flakes (measure after you blend the coconut flakes together – see Step 1 for instruction.)
