{Paleo & Vegan} Healthy Cadbury Eggs

Posted by on Apr 18, 2014 in Desserts, Holiday, Holiday, Recipes, Toddler/Child | Comments Off on {Paleo & Vegan} Healthy Cadbury Eggs

Cadbury Eggs were an Easter tradition growing up as a kid, and I  absolutely loved them. We usually only got one or two Cadbury Eggs in our Easter basket, so we preserved them and saved them until we were ready to devour them! Fast forward to now, and I honestly can’t remember the last time I had a Cadbury Egg. Yes, they were a fun tradition growing up, but as I have become more health conscious, I’ve decided to ditch the Cadbury Eggs and choose healthier options instead. I am so happy to say that I have found a homemade – Paleo and Vegan – version of Cadbury Eggs! It’s still candy, but a much healthier option than what Cadbury has to offer. This is something I wouldn’t mind eating or allowing my kids to eat every year for...

Health Benefits of Kale

Posted by on Apr 10, 2014 in Beverages, Nutrition, Recipes, Sides and Snacks, Toddler/Child | Comments Off on Health Benefits of Kale

Kale has received a lot of attention lately, and for good reason too. It is full of healthy vitamins and minerals that are important for your body. Health Benefits of Kale Check out the infographic below to see the health benefits of kale. Good To Know: As you can see in the infographic, Kale has more calcium than milk, making it a great source of calcium for those who are lactose intolerant or vegan. Kale also has more iron than beef, making it  another vegan alternative.   Adding Kale To Your Diet Just last night, I had a bunch of kale and some apples that needed to be used soon before they went bad. I decided to juice the kale and apples and…voila! It was super simple and easy (recipe below). I shared the organic green juice with my daughter...

Ingredients • 2 lbs. of carrots, peeled, halved, and halved lengthwise • 2 tablespoons of olive oil (Skinny Twinkie’s Note: I would suggest using coconut oil instead, since it handles heat much better than olive oil. Trust me, it still tastes amazing.) • 1 tablespoon of raw honey • salt & pepper to taste {about ½ teaspoon of each} • parsley, garnish (optional) For full instructions on how to make this yummy side dish, please visit joyfulhealthyeats.com Enjoy! Posted by on Mar 21, 2014 in Recipes, Sides and Snacks, Toddler/Child | Comments Off on Strawberry Gummy Fruit Snacks

I absolutely LOVE making gummy fruit snacks for my daughter, since they are actually healthy and made with REAL FRUIT! Of course, eating fresh fruit is always best – but gummy fruit snacks is a fun and different way to eat fruit. For those of you who are worried about the time involved – it’s not a lot! This recipe is SUPER easy and quick! Strawberry Gummy Fruit Snacks Ingredients:  •  1 cup Strawberry Juice (about 15-20 strawberries) • 1/4 cup Lemon Juice (about 1 lemon) • 1/3 cup (9 tablespoons) unflavored Gelatin Instructions: Step 1) Whisk together the strawberry juice, lemon juice, and gelatin, in a sauce pain on medium heat. {Paleo & Vegan} Shamrock Shake Recipe

Posted by on Mar 14, 2014 in Beverages, Holiday, Recipes | Comments Off on {Paleo & Vegan} Shamrock Shake Recipe

Every St. Patrick’s Day, I see advertising for McDonald’s Shamrock Shake. Yes, it’s green…but it’s green from food dye rather than healthy green fruit or vegetables. It’s full of processed sugars, artificial flavorings and milk sourced from who knows where. The good news? There’s a much healthier – even Paleo & Vegan! – version of McDonald’s Shamrock Shake. Delicious doesn’t have to be guilty. Healthy Shamrock Shake Recipe Ingredients:  1 can coconut milk (you can also sub 1 ¾ cups of any other type of milk) 1 avocado, peeled and seed removed 2 1/2 – 3 tablespoons pure raw honey, (or other sweetener of choice) 1 cup of ice 1 tablespoon pure vanilla extract 1 teaspoon pure peppermint extract For full recipe instructions, please visit: primallyinspired.com Feel free to follow us, however you...

Sour Gummy Fruit Snacks

Posted by on Mar 7, 2014 in Recipes, Sides and Snacks | Comments Off on Sour Gummy Fruit Snacks

I love fruit snacks, but they can be a bit expensive when you buy “the healthy kind” at the health food store or they just have too much sugar in them (organic or not…it’s still sugar and I don’t want to give it to my little one). I decided it was time to make some homemade gummy fruit snacks for my daughter. I tried it out, and I was so happen when my little one gobbled them up! I ended up trying a few for myself, and ended up making a second batch the same day. It tasted good – in addition to being super healthy (and easy to make)! Something else I am super excited about…these have fresh lemon juice in them! They are full of Vitamin C! Whenever I am sick, I drink lemon juice several times throughout...
