Avocado, Corn, and Tomato Salad
I love fresh and healthy ingredients and easy instructions when I find a recipe. This is it. Ingredients Salad: • 2 cups cooked corn, fresh or frozen • 1-2 avocados, cut into 1/2-inch cubes • 1 pint cherry or grape tomatoes, halved • 1/2 cup finely diced red onion Dressing: • 2 tablespoons olive oil • 1/2 teaspoon grated lime zest • 1 tablespoon fresh lime juice • 1/4 cup chopped cilantro • 1/4 teaspoon salt • 1/4 teaspoon pepper For full instructions on how to make this yummy salad, please visit the-girl-who-ate-everything.com I highly recommend using organic ingredients, especially when it comes to the corn since most corn is genetically modified (GMO) and dangerous to your health. Whenever possible, choose organic ingredients for the safest choice. Enjoy! Feel free to follow Skinny Twinkie: Google+, Facebook, Twitter, Pinterest, Instagram, YouTube...

Before I write a little about my first mother-daughter lunch, I want you all to know that my goal is to provide others (parents or not) with ideas for healthy eating options outside of the home. I will try to focus on large chain stores and restaurants so it’s relevant to you, however, I am not going to eat some place if I can’t find something healthy for my daughter and I to eat. Our first lunch out, for example, is a very small chain restaurant. Because of this, I plan on providing insights in this post and others like it so that it can be as relevant to you as possible. In any case, you get to see pictures of my adorable daughter ;) Speaking of my adorable daughter… now that she is a little bit older (she’s...

Read MoreKeep it out of your house!
“If you can’t eat it responsibly, keep it out of your house” The other day I was about to buy some delicious cookies. They’re made with natural ingredients, so I buy them every so often, but I still wouldn’t consider them “healthy” since they still have sugar. I mean, they are cookies! It’s a nice “once in a while” treat. These cookies taste AMAZING – which means I have a hard time controlling the amount that I eat. So when I am trying to lose weight, these cookies just don’t belong in my house. It’s just too easy to turn to them when I am hungry, craving something yummy, or too tired to make something. You know yourself, and if you can’t eat a not-so-healthy food item responsibly, just keep it out of your house. Don’t sabotage your...
